Unlike sweet almonds, bitter almonds contain amygdalin, which converts to hydrogen cyanide during digestion. You’d need to eat a lot of raw bitter almonds to cause serious harm, but a handful of improperly processed ones could make you very sick. Most commercial almond products use sweet varieties, so your store-bought almond butter is completely safe.
